French Dressing Pasta Salad

Ingredients

  • 1 lb. whole grain medium shaped pasta of choice
  • salt & pepper to taste
  • 1 pint grape tomatoes halved
  • 1 large cucumber peeled, seeded and chopped
  • 4 carrots peeled and chopped
  • 1 red bell pepper chopped
  • 1 bunch green onions chopped
  • 2 15 oz. cans kidney beans drained and rinsed

For the dressing:

  • 2 Tbs. maple syrup
  • ¼ cup apple cider vinegar
  • 2 Tbs. water
  • 3 Tbs. tomato paste
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • ½ tsp. ground mustard
  • 1 tsp. tamari

Instructions

For the pasta and veggies:

  • Cook the pasta according to the package directions.
  • When the pasta has finished cooking, drain it and rinse under cool water to stop the cooking process.
  • While the pasta cooks, prep the vegetables and mix the dressing.

For the dressing:

  • In a container with a tight-fitting lid, combine all ingredients and shake well to combine.

For the salad:

  • Place cooked pasta in a large bowl with all the vegetables and beans.
  • Pour the dressing over the top and stir to coat everything in the dressing.

Notes

Note: extra tomato paste can be frozen for use in other recipes.
