Ingredients

whole grain medium shaped pasta of choice
salt & pepper
to taste

pint
grape tomatoes
halved

large
cucumber
peeled, seeded and chopped

carrots
peeled and chopped
1
red bell pepper
chopped
1
bunch
green onions
chopped

15 oz.
cans kidney beans
drained and rinsed
For the dressing:

maple syrup

cup
apple cider vinegar

water

tomato paste

tsp.
onion powder

garlic powder

tsp.
paprika

tsp.
ground mustard

tsp.
tamari
Instructions
For the pasta and veggies:
Cook the pasta according to the package directions.
When the pasta has finished cooking, drain it and rinse under cool water to stop the cooking process.
While the pasta cooks, prep the vegetables and mix the dressing.
For the dressing:
In a container with a tight-fitting lid, combine all ingredients and shake well to combine.
For the salad:
Place cooked pasta in a large bowl with all the vegetables and beans.
Pour the dressing over the top and stir to coat everything in the dressing.
Notes
Note: extra tomato paste can be frozen for use in other recipes.
