White Chocolate Cranberry Bars

Ingredients

  • 9 Tbs. butter cut into pieces
  • 9 oz. white chocolate I used Baker’s squares
  • 1 Tbs. vanilla
  • cups flour
  • ¾ tsp. baking powder
  • ¼ tsp. salt
  • 3 eggs
  • ¾ cup sugar
  • 1 cup dried cranberries

Instructions

  • Preheat the oven to 325°  and line a 9" square baking pan with waxed paper.
  • Melt the chocolate and butter together in the microwave, stirring every 30 seconds until melted smooth. 
  • Stir in the vanilla. Mix the flour, baking powder and salt in a small bowl. 
  • With an electric mixer, beat the eggs and sugar together, then add the chocolate mixture and blend. 
  • Add in the flour mixture and blend until well combined.
  • Stir in the cranberries.
  • Spread into the pan and bake for 45 minutes or until a toothpick comes out clean. 
  • Don’t underbake and cool completely before serving.
