Rainbow Salad with French Dressing

For the salad:
- 24 oz. bag romaine lettuce
- 2 cups cherry or grape tomatoes
- 1 large cucumber chopped
- 2 large carrots chopped
- 1 red onion chopped
- 1 cup roasted pumpkin seeds
- 15 oz. can kidney beans optional
For the dressing:
- 2 Tbs. maple syrup
- ¼ cup apple cider vinegar
- 2 Tbs. water
- 3 Tbs. tomato paste
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. paprika
- ½ tsp. ground mustard
- 1 tsp. tamari
Combine all the vegetables, pumpkin seeds and kidney beans, if using.
Whisk together ingredients for the dressing, pour over the veggies and serve.
