Ingredients

For the salad:

  • 12 oz. bag romaine lettuce
  • 1 cup cherry or grape tomatoes
  • 1 small cucumber chopped
  • 1 large carrot chopped
  • 1 small red onion chopped
  • ½ cup roasted pumpkin seeds
  • ½ 15 oz. can kidney beans optional

For the dressing:

  • 1 Tbs. maple syrup
  • 2 Tbs. apple cider vinegar
  • 1 Tbs. water
  • Tbs. tomato paste
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. paprika
  • ¼ tsp. ground mustard
  • ½ tsp. tamari

Instructions

  • Combine all the vegetables, pumpkin seeds and kidney beans, if using. 
  • Whisk together ingredients for the dressing, pour over the veggies and serve.
