Sheet Pan Vegan Sausage with Maple-Mustard Apples & Brussels Sprouts

- 2 lb. brussels sprouts halved
- 4 apples peeled and sliced
- 1 red onion chopped
- ¼ cup dijon mustard
- ¼ cup maple syrup
- 2 Tbs. apple cider vinegar
- salt & pepper to taste
- 2 13 oz. packages plant-based apple-sage sausage
Preheat the oven to 425°.
Place the brussels sprouts, apples and onions on a sheet pan.
Stir the mustard, maple syrup, cider vinegar, salt and pepper together.
Drizzle over the vegetables and apples and toss to coat.
Slice each sausage in half lengthwise.
Place over the top of the other ingredients on the sheet pan.
Bake for 30 minutes.
