Sheet Pan Vegan Sausage with Maple-Mustard Apples & Brussels Sprouts

Ingredients

  • 2 lb. brussels sprouts halved
  • 4 apples peeled and sliced
  • 1 red onion chopped
  • ¼ cup dijon mustard
  • ¼ cup maple syrup
  • 2 Tbs. apple cider vinegar
  • salt & pepper to taste
  • 2 13 oz. packages plant-based apple-sage sausage

Instructions

  • Preheat the oven to 425°.
  • Place the brussels sprouts, apples and onions on a sheet pan.
  • Stir the mustard, maple syrup, cider vinegar, salt and pepper together.
  • Drizzle over the vegetables and apples and toss to coat.
  • Slice each sausage in half lengthwise.
  • Place over the top of the other ingredients on the sheet pan.
  • Bake for 30 minutes.
