Sundried Tomato, Artichoke Heart and Parmesan Hummus

- 15 oz. can garbanzo beans drained
- 3 Tbs. tahini
- 3 Tbs. olive oil
- ¼ cup water
- 1 clove garlic
- 1 lemon juice and zest
- ½ tsp. sea salt
- ⅓ cup sun-dried tomatoes chopped
- ⅓ cup marinated artichoke hearts chopped
- ¼ cup parmesan cheese shaved or shredded
Add first 7 ingredients to the food processor or blender and blend until smooth.
Spoon hummus into a bowl.
Stir sun-dried tomatoes, artichoke hearts and parmesan into hummus, reserving a small amount of each for topping.
Place hummus in serving dish and top with remaining sun-dried tomatoes, artichoke hearts and parmesan.
Serve with crackers or raw veggies.
