Sundried Tomato, Artichoke Heart and Parmesan Hummus

Ingredients

  • 15 oz. can garbanzo beans drained
  • 3 Tbs. tahini
  • 3 Tbs. olive oil
  • ¼ cup water
  • 1 clove garlic
  • 1 lemon juice and zest
  • ½ tsp. sea salt
  • cup sun-dried tomatoes chopped
  • cup marinated artichoke hearts chopped
  • ¼ cup parmesan cheese shaved or shredded

Instructions

  • Add first 7 ingredients to the food processor or blender and blend until smooth.
  • Spoon hummus into a bowl.
  • Stir sun-dried tomatoes, artichoke hearts and parmesan into hummus, reserving a small amount of each for topping.
  • Place hummus in serving dish and top with remaining sun-dried tomatoes, artichoke hearts and parmesan.
  • Serve with crackers or raw veggies.
