Chickpea Sweet Potato Salad with Feta over Spinach

For the salad:
- 6 cups baby spinach
- 15 oz. chickpeas
- ¼ cup feta
For the sweet potatoes:
- 2 medium sweet potatoes
- olive oil drizzle
- salt & pepper to taste
For the dressing:
- 1 Tbs. apple cider vinegar
- 1 Tbs. vegetable oil
- ½ tsp. dijon mustard
- ½ tsp. honey
- salt & pepper to taste
Dice sweet potatoes, toss with olive oil, salt & pepper.
Pour on a sheet pan and roast in over at 425° for 20 minutes or until tender when poked with a fork.
For the dressing:
Make the dressing by whisking together cider vinegar, vegetable oil, mustard, honey, salt, and pepper.
Top spinach with sweet potatoes, chickpeas, feta, and dressing.
