Kale Power Salad with Chickpeas

- 6 broccoli crowns
- 6 carrots
- 3 small bunches kale stems removed
- 1½ cups almonds chopped
- 3 cups dried berries cherries, cranberries, blueberries
- ⅓ cup lemon juice
- ⅓ cup rice vinegar or other mild-flavored vinegar
- ⅓ cup maple syrup
- salt & pepper to taste
- 2 15 oz. cans chickpeas
Finely chop the broccoli, carrot and kale.
Add almonds, and dried fruit to the bowl and stir to combine.
Add lemon juice, vinegar and syrup and toss to coat.
Taste, and add salt and/or pepper as needed.
Top with chickpeas.
