Kale Power Salad with Chickpeas

Ingredients

  • 6 broccoli crowns
  • 6 carrots
  • 3 small bunches kale stems removed
  • cups almonds chopped
  • 3 cups dried berries cherries, cranberries, blueberries
  • cup lemon juice
  • cup rice vinegar or other mild-flavored vinegar
  • cup maple syrup
  • salt & pepper to taste
  • 2 15 oz. cans chickpeas

Instructions

  • Finely chop the broccoli, carrot and kale.
  • Add almonds, and dried fruit to the bowl and stir to combine.
  • Add lemon juice, vinegar and syrup and toss to coat.
  • Taste, and add salt and/or pepper as needed.
  • Top with chickpeas.
