Roasted Greek Vegetables

Ingredients

  • 3 red bell peppers chopped
  • 4 zucchini chopped
  • 3 cups grape or cherry tomatoes halved
  • 6 cup green beans
  • 4-6 Tbs. olive oil
  • 2 Tbs. oregano
  • 2 Tbs. thyme
  • salt and pepper

Instructions

  • Toss all ingredients together and roast on sheet pan at 425° for about 20 minutes.

Notes

Note: You can use thin frozen green beans and don't even need to thaw them before roasting if you prefer.
