For the salad:
- 12-16 cups mixed baby greens
- 3-4 peaches thinly sliced
- 1 cup pecan halves
- 2 15 oz. cans chickpeas or cannellini beans optional
For the dressing:
- 3 Tbs. cider vinegar
- 1 Tbs. maple syrup
- 1 Tbs. dried minced onion
- salt & pepper to taste
Whisk together the vinegar, maple syrup, onion, salt and pepper to make dressing.
In a large bowl, toss together the salad ingredients and add dressing to taste.
