Smoky Black Bean Walnut Burgers

Ingredients

  • cups raw unsalted walnuts
  • 1 Tbs. chili powder
  • 1 Tbs. smoked paprika
  • 2 15 oz. cans black beans rinsed and drained
  • 1 cup brown rice cooked
  • ¼ cup barbeque sauce
  • 5 whole-wheat sandwich buns optional for serving
  • 5 slices large tomato optional for serving
  • 5 leaves large lettuce optional for serving
  • 5 slices onion optional for serving
  • burger condiments ketchup, mustard, mayonnaise, BBQ sauce, optional for serving

Instructions

  • Using a food processor or a good blender, very finely chop the walnuts and spices together.
  • In a large bowl, mash the black beans. I found a stand mixer works well for this step, but you can also use a fork.
  • Stir the walnuts, rice and barbeque sauce into the black beans until well combined. Again, the stand mixer works great for this.
  • Form five burgers from the mixture and place on a baking sheet.
  • Bake at 400° for about 30 minutes.
  • You could also fry these in a skillet or griddle. Any leftover burgers can be frozen, if desired.

Notes:
If you don't have cooked rice already, get that going first.
Panko bread crumbs can be substituted for walnuts if you prefer
