Angel Hair Pasta with Red Onion and Black Olives

Ingredients

  • 2-3 chicken breasts boneless
  • kosher salt & black pepper to taste
  • ½ lb. angel hair pasta
  • 2 Tbs. butter
  • 4 cloves garlic minced or chopped
  • 1 small red onion
  • ¼ cup white wine
  • 1 ladle of cooking water from pasta
  • 1 Tbs. fresh parsley chopped
  • 1 Tbs. fresh basil chopped
  • 4 oz. can whole black olives
  • ½ cup parmesan cheese shredded

Instructions

  • Season chicken with kosher salt & pepper and grill outside or cook in a skillet until done, then slice thin.
  • Cook the pasta according to the package directions.
  • Melt the butter in a skillet and add the onion and garlic to cook for a few minutes.
  • Add the wine and cook for two more minutes, then add the pasta cooking water.
  • Stir in the parsley & basil and season with kosher salt & pepper.
  • Drain the pasta and mix with the sauce.
  • Add cheese to the pasta and stir to combine.
  • Serve with grilled chicken.
