Garlic Potatoes

Ingredients

  • 4-6 potatoes Yukon gold, red or russet
  • 1 bulb garlic
  • 2 Tbs. olive oil
  • ½ cup chicken broth
  • kosher salt to taste
  • fresh ground pepper to taste

Instructions

  • Clean and chop the potatoes.
  • Chop the top off the garlic bulb to expose the cloves inside. 
  • Put the potatoes in a shallow pan and set the garlic in with the potatoes. 
  • Drizzle olive oil over the potatoes and garlic and pour the chicken broth over the top. 
  • Season with salt & pepper.
  • Cover the pan tightly with foil and bake at 400° for 45-60 minutes. 
  • Use a fork to pop the cloves out of the garlic bulb into the potatoes. 
  • Stir it all up and serve.
