Garlic Potatoes

- 2-3 potatoes Yukon gold, red or russet will work fine
- 1 bulb garlic
- 1 Tbs. olive oil
- ¼ cup chicken broth
- kosher salt to taste
- fresh ground pepper to taste
Clean and chop the potatoes.
Chop the top off the garlic bulb to expose the cloves inside.
Put the potatoes in a shallow pan and set the garlic in with the potatoes.
Drizzle olive oil over the potatoes and garlic and pour the chicken broth over the top.
Season with salt and pepper.
Cover the pan tightly with foil and bake at 400° for 45-60 minutes.
Use a fork to pop the cloves out of the garlic bulb into the potatoes.
Stir it all up and serve.
