Potato Skins

Ingredients

  • 2-3 Tbs. olive oil
  • 6-8 potato skins from 3-4 potatoes
  • 1+ cup cheddar cheese shredded
  • 6-8 strips bacon crumbled
  • kosher salt & pepper
  • 3-4 green onions optional for topping
  • ½ cup sour cream optional for topping

Instructions

  • Brush olive oil over potato skins, inside and out.
  • Sprinkle with salt and bake at 450° for 10 minutes.
  • Turn over and bake for another 10 minutes.
  • Remove from oven and fill with cheese and bacon.
  • Return to the oven under the broiler for a few minutes to melt the cheese.
  • Serve with sour cream and green onions.
