Potato Skins

- 1-1½ Tbs. olive oil
- 4 potato skins from 2 potatoes
- ½+ cup cheddar cheese shredded
- 3-4 strips bacon crumbled
- kosher salt & pepper
- 1-2 green onions optional for topping
- ¼ cup sour cream optional for topping
Brush olive oil over potato skins, inside and out.
Sprinkle with salt and bake at 450° for 10 minutes.
Turn over and bake for another 10 minutes.
Remove from oven and fill with cheese and bacon.
Return to the oven under the broiler for a few minutes to melt the cheese.
Serve with sour cream and green onions.
