Easy Pizza Rice Casserole

Ingredients

  • 3 cups instant brown rice
  • lb. Italian sausage ground
  • 1 large onion diced
  • 2 cloves garlic crushed
  • 1 large zucchini chopped
  • 15 oz. can tomato sauce
  • ¾ tsp. oregano
  • 24 oz. cottage cheese optional
  • 9 slices provolone cheese

Instructions

  • Cook rice according to package directions.
  • Brown sausage, onion and garlic in a skillet over medium heat until the sausage is cooked fully.
  • Add zucchini to the skillet 5-7 minutes before the sausage is done.
  • Drain the meat and rinse with hot water to remove extra grease, then return to the skillet.
  • Stir tomato sauce and oregano into the meat.
  • Stir cottage cheese into the cooked rice and pour the rice mixture into a greased 9x13 casserole dish.
  • Top with the meat mixture and sprinkle with cheese.
  • Bake at 350° for 20 minutes or until heated through.
