Easy Pizza Rice Casserole

- 1½ cups instant brown rice
- ¾ lb. Italian sausage ground
- 1 small onion diced
- 1 clove garlic crushed
- 1 medium zucchini chopped
- ½ 15 oz. can tomato sauce
- ⅓ tsp. oregano
- 12 oz. cottage cheese optional
- 5 slices provolone cheese
Cook rice according to package directions.
Brown sausage, onion and garlic in a skillet over medium heat until the sausage is cooked fully.
Add zucchini to the skillet 5-7 minutes before the sausage is done.
Drain the meat and rinse with hot water to remove extra grease, then return to the skillet.
Stir tomato sauce and oregano into the meat.
Stir cottage cheese into the cooked rice and pour the rice mixture into a greased 9x9 casserole dish.
Top with the meat mixture and sprinkle with cheese.
Bake at 350° for 20 minutes or until heated through.
