Ingredients

  • 1 small onion chopped
  • 1 stalk celery chopped
  • 3 cloves garlic crushed
  • tsp. olive oil
  • 1 small turnip chopped
  • 1-2 carrots chopped
  • 4 cups vegetable broth
  • 1 small sprig rosemary or ½ tsp. dried
  • 1 small sprig thyme or ½ tsp. dried
  • ¼ tsp. cayenne
  • ½ red bell pepper chopped
  • ½ cup green beans cut in bite-size pieces
  • ½ cup frozen peas
  • 15 oz. diced tomatoes with juice
  • ½ cup quick-cooking barley
  • salt & pepper to taste

Instructions

  • Put everything except the barley in the slow cooker and cook for 5-6 hours on high or for 7-8 hours on low.
  • Stir barley in 30-60 minutes before serving.
