Strawberry Chocolate Chip Cake with Strawberry Icing

Ingredients

For the cake:

  • 1 box strawberry cake mix
  • 1 pkg. instant strawberry creme pudding mix
  • cups milk
  • 2 eggs
  • cups mini chocolate chips

For the icing:

  • 1 stick butter softened
  • cups powdered sugar
  • ½ cup fresh strawberries diced
  • 1 tsp. vanilla
  • 1 Tbs. milk as needed

Instructions

For the cake:

  • Mix all ingredients except chocolate chips with an electric mixer till well combined.
  • Fold in the chocolate chips and pour into a greased 10x15 inch baking pan.
  • Bake at 350° for 25 minutes or until a toothpick comes out clean.
  • Cool completely before icing.

For the icing:

  • Beat the butter with an electric mixer.
  • Add powdered sugar and beat, then add strawberries and vanilla.
  • If needed to make the icing spreadable, add a bit of milk a teaspoon at a time.
  • Spread icing on cake and store in the refrigerator.
