Cheesy Smoked Sausage Chowder

- 1 Tbs. olive oil
- 1 small onion
- 1-2 stalks celery diced
- 2 cups potatoes peeled and chopped
- 16 oz. chicken broth
- 1 cup water
- 2 sticks butter
- ⅓ cup flour
- 1½ cups milk
- 4 oz. cheddar shredded
- ½ link smoked sausage sliced
- salt & pepper to taste
Cook the onion and celery in olive oil in a large pot.
When the onion is soft, add potatoes, broth and water to the pot, bring to boil and cook until potatoes are tender.
In a saucepan, make a white sauce by melting butter over medium heat.
Whisk in flour and cook for 1 minute then whisk in milk.
Add cheese and stir till cheese is melted and sauce is thickened.
Add cheese sauce to the broth and stir in smoked sausage.
Heat soup for several more minutes, being careful not to let it boil and season with salt and pepper.
