Ingredients

For the salad:

  • 2 heads romaine lettuce chopped
  • 4 green onions chopped
  • 2 tomatoes chopped
  • 15 oz. can black beans rinsed and drained
  • 1 cup frozen corn thawed
  • 1 cucumber diced
  • 1 red onion chopped
  • ½ cup cheddar jack cheese shredded
  • 1 avocado diced
  • ¾ lb. chicken breast grilled and diced, optional

For the dressing:

  • ½ cup buttermilk
  • ½ cup mayonnaise
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • tsp. dried parsley
  • ⅛-¼ tsp. sauce from chipotle chiles in adobo to taste

Instructions

For the salad:

  • Toss all ingredients in a large bowl and dress to taste.

For the dressing:

  • Mix the ingredients together in a blender for 10 seconds to make the dressing.
