Ingredients

For the salad:

  • 1 head romaine lettuce chopped
  • 2 green onions chopped
  • 1 tomato chopped
  • ½ 15 oz. can black beans rinsed and drained
  • ½ cup frozen corn thawed
  • 1 small cucumber diced
  • 1 small red onion chopped
  • ¼ cup cheddar jack cheese shredded
  • ½ avocado diced
  • lb. chicken breast grilled and diced, optional

For the dressing:

  • ¼ cup buttermilk
  • ¼ cup mayonnaise
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • ¾ tsp. dried parsley
  • dash - ⅛ tsp. sauce from chipotle chiles in adobo to taste

Instructions

For the salad:

  • Toss all ingredients in a large bowl and dress to taste.

For the dressing:

  • Mix ingredients together in a blender for 10 seconds.
