Spicy Garlic Chickpeas & Veggies

Ingredients

  • 1 large onion chopped
  • 4 cloves garlic crushed
  • 3 medium zucchini chopped
  • 1 large red bell pepper chopped
  • 2 15 oz. can chickpeas drained and rinsed
  • ¼ cup vinegar
  • ¼ cup soy sauce
  • 1 Tbs. olive oil
  • ½ tsp. cayenne pepper
  • 1 tsp. black pepper

Instructions

  • In a large skillet cook the onion and garlic in a bit of water over medium heat, until the onion is soft.
  • Add the zucchini and bell pepper to the skillet and cook until the vegetables are tender-crisp.
  • Add the chickpeas to the skillet.
  • Stir together the remaining ingredients and pour into the skillet.
  • Cook 1-2 minutes more until everything is hot.
