- 1 onion chopped
- 2 cloves garlic crushed
- 2 medium zucchini chopped
- 1 red bell pepper chopped
- 15 oz. can chickpeas drained and rinsed
- 2 Tbs. vinegar
- 2 Tbs. soy sauce
- 1½ tsp. olive oil
- ¼ tsp. cayenne pepper
- ½ tsp. black pepper
In a large skillet cook the onion and garlic in a bit of water over medium heat, until the onion is soft.
Add the zucchini and bell pepper to the skillet and cook until the vegetables are tender-crisp.
Add the chickpeas to the skillet.
Stir together the remaining ingredients and pour into the skillet.
Cook 1-2 minutes more until everything is hot.
