- 2-3 lbs. chicken thighs or breasts boneless
- 16 oz. bottle BBQ sauce
- 16 oz. jar peach salsa
- 6-8 sandwich rolls for serving
Put the chicken, BBQ sauce, and salsa in the instant pot.
Set cook time for 15 minutes, followed by a quick pressure release.
Remove the chicken to a cutting board and shred using two large forks.
Return the shredded chicken to the pot and combine with the sauce.
Serve on rolls.
