Vegan Zucchini "Crab" Cakes

Ingredients

For the "crab" cakes:

  • 5 cups zucchini shredded , about 4-6 medium zucchini, water squeezed out
  • 2 Tbs. flaxseed meal
  • 2 cups whole-wheat panko breadcrumbs
  • ½ cup onion minced
  • ½ cup red bell pepper minced
  • ½ cup whole-wheat flour
  • 2 Tbs. Old Bay seasoning or use homemade

For homemade Old Bay Seasoning:

  • 1 Tbs. celery salt
  • ¼ tsp. paprika
  • tsp. black pepper
  • tsp. cayenne
  • pinch ground mustard
  • pinch cinnamon
  • pinch allspice
  • pinch cloves
  • pinch ginger

Instructions

For the "vegan" crab cakes:

  • Combine all ingredients in a bowl and pat into 8 patties.
  • Place on a lined baking sheet and bake at 400° for 25-30 minutes.

For the Old Bay Seasoning:

  • Mix ingredients and store in an air-tight jar.
