Ingredients

For vegan "crab" cakes:

  • cups shredded zucchini shredded, about 2-3 medium zucchini, water squeezed out
  • 1 Tbs. flaxseed meal
  • 1 cup whole-wheat panko breadcrumbs
  • ¼ cup onion minced
  • ¼ cup red bell pepper minced
  • ¼ cup whole-wheat flour
  • 1 Tbs. Old Bay seasoning or use homemade

For homemade Old Bay Seasoning:

  • 1 Tbs. celery salt
  • ¼ tsp. paprika
  • tsp. black pepper
  • tsp. cayenne
  • pinch ground mustard
  • pinch cinnamon
  • pinch allspice
  • pinch cloves
  • pinch ginger

Instructions

For vegan "crab" cakes:

  • Combine all ingredients in a bowl and pat into 4 patties.
  • Place on a lined baking sheet and bake at 400° for 25-30 minutes.

For homemade Old Bay Seasoning:

  • Mix ingredients and store in an air-tight jar.
