- 1 small onion chopped
- 1 small green pepper chopped
- ½ lb. smoked sausage sliced
- ½-1 Tbs. olive oil
- 1½ cups long-grain rice uncooked
- 10 oz. can French onion soup
- 15 oz. can beef or chicken broth
- 1-1½ tsp. Creole or Cajun seasoning
- hot sauce
Sauté the onion, green pepper, and smoked sausage in a bit of olive oil in a large Dutch oven.
Stir in the other ingredients.
Bake, covered at 350° degrees for 40 minutes, stirring at about 30 minutes into the baking time.
