Easy Jambalaya

Ingredients

  • 1 small onion chopped
  • 1 small green pepper chopped
  • ½ lb. smoked sausage sliced
  • ½-1 Tbs. olive oil
  • cups long-grain rice uncooked
  • 10 oz. can French onion soup
  • 15 oz. can beef or chicken broth
  • 1-1½ tsp. Creole or Cajun seasoning
  • hot sauce

Instructions

  • Sauté the onion, green pepper, and smoked sausage in a bit of olive oil in a large Dutch oven. 
  • Stir in the other ingredients. 
  • Bake, covered at 350° degrees for 40 minutes, stirring at about 30 minutes into the baking time.
