Creamy Chicken Florentine

Ingredients

  • 1½-2 lbs. boneless chicken cut into pieces
  • 1 red bell pepper sliced
  • 16 oz. cream cheese spread
  • ¼ cup milk
  • 1 Tbs. garlic powder
  • 10 oz. baby spinach leaves
  • 1 lb. penne pasta cooked
  • ¼ cup pine nuts or slivered almonds, optional

Instructions

  • Cook the chicken and peppers in a skillet over medium heat until the chicken is done.
  • Stir in cream cheese, milk & garlic powder and cook for 3 minutes, stirring frequently.
  • Stir in the spinach and cooked pasta, and top with nuts.
