- ¾-1 lb. boneless chicken cut into pieces
- 1 small red bell pepper sliced
- 8 oz. cream cheese spread
- 2 Tbs. milk
- 1½ tsp. garlic powder
- ½ 10 oz. bag baby spinach leaves
- ½ lb. penne pasta cooked
- 2 Tbs. pine nuts or slivered almonds, optional
Cook the chicken and peppers in a skillet over medium heat until the chicken is done.
Stir in cream cheese, milk & garlic powder and cook for 3 minutes, stirring frequently.
Stir in the spinach and cooked pasta, and top with nuts.
