- 2 15 oz. cans chickpeas drained and rinsed
- 1 medium yellow onion chopped
- 6 cloves garlic chopped
- 4 Tbs. fresh parsley chopped
- 1 Tbs. arrowroot
- 4 tsp. ground coriander
- 2 tsp. ground cumin
- ½ tsp. salt
- pepper to taste
Place all ingredients in a food processor and process until there's still a bit of texture to the chickpeas, but they're mostly mashed.
Form small balls and flatten slightly.
Place on a lined baking sheet. Bake at 400° for 25 minutes, flip them over and bake for 20 more minutes.
