Baked Falafel

Ingredients

  • 2 15 oz. cans chickpeas drained and rinsed
  • 1 medium yellow onion chopped
  • 6 cloves garlic chopped
  • 4 Tbs. fresh parsley chopped
  • 1 Tbs. arrowroot
  • 4 tsp. ground coriander
  • 2 tsp. ground cumin
  • ½ tsp. salt
  • pepper to taste

Instructions

  • Place all ingredients in a food processor and process until there's still a bit of texture to the chickpeas, but they're mostly mashed.
  • Form small balls and flatten slightly.
  • Place on a lined baking sheet. Bake at 400° for 25 minutes, flip them over and bake for 20 more minutes.
