Angel Hair Pasta with Red Onion and Black Olives

- 2-3 chicken breasts boneless 
 - kosher salt & black pepper to taste
 - ½ lb. angel hair pasta
 - 2 Tbs. butter
 - 4 cloves garlic minced or chopped
 - 1 small red onion
 - ¼ cup white wine
 - 1 ladle of cooking water from pasta
 - 1 Tbs. fresh parsley chopped
 - 1 Tbs. fresh basil chopped
 - 4 oz. can whole black olives
 - ½ cup parmesan cheese shredded
 
 
Season chicken with kosher salt & pepper and grill outside or cook in a skillet until done, then slice thin. 
Cook the pasta according to the package directions.
Melt the butter in a skillet and add the onion and garlic to cook for a few minutes. 
Add the wine and cook for two more minutes, then add the pasta cooking water. 
Stir in the parsley & basil and season with kosher salt & pepper.
Drain the pasta and mix with the sauce. 
Add cheese to the pasta and stir to combine.
Serve with grilled chicken.
