For the salad:
- 1 head romaine lettuce
- 1 apple chopped
- ⅓ cup cranberries dried
- 2 ribs celery chopped
- ⅓ cup pecans chopped
For the dressing:
- 1½ Tbs. all-fruit seedless raspberry preserves
- ⅓ cup olive oil
- 3 Tbs. red wine vinegar
- salt & pepper to taste
For the dressing:
To make the dressing: melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
