Apple, Cranberry, Pecan Side Salad

Ingredients

For the salad:

  • 1 small head romaine lettuce
  • 1 small apple chopped
  • ¼ cup cranberries dried
  • 1 rib celery chopped
  • ¼ cup chopped pecans

For the dressing:

  • ¾ Tbs. all fruit seedless raspberry preserves
  • ¼ cup olive oil
  • Tbs. red wine vinegar
  • salt & pepper to taste

Instructions

  • Combine the lettuce, apples, cranberries, celery, pecans, and chicken in a large bowl. 
  • Add dressing to taste and serve.
  • To make the dressing: melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
    Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
