Apple, Cranberry, Pecan Side Salad

For the salad:
- 1 small head romaine lettuce
- 1 small apple chopped
- ¼ cup cranberries dried
- 1 rib celery chopped
- ¼ cup chopped pecans
For the dressing:
- ¾ Tbs. all fruit seedless raspberry preserves
- ¼ cup olive oil
- 1½ Tbs. red wine vinegar
- salt & pepper to taste
Combine the lettuce, apples, cranberries, celery, pecans, and chicken in a large bowl.
Add dressing to taste and serve.
To make the dressing: melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
