Chocolate Chip Waffles

Ingredients

  • ¼ stick butter
  • ¾ cups flour
  • ½ Tbs. sugar
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • ¾ cups milk
  • 2 small eggs separated, at room temp
  • ¼ cup mini chocolate chips

Instructions

  • In a large bowl, stir together the dry ingredients. 
  • Melt the butter in a bowl in the microwave and stir the milk and then the egg yolks.  Add this mixture to the dry ingredients, being careful not to over mix.
  • With an electric mixer, beat the egg whites until stiff peaks form. 
  • Carefully fold the egg whites into the batter, then stir in the chocolate chips. 
  • Cook in the waffle iron.
