Ingredients

For the salad:

  • 2 heads romaine lettuce
  • 2 cucumbers diced
  • 3 tomatoes seeded and diced
  • 1 cup Kalamata olives
  • 1 cup feta crumbled
  • ¾ lb. grilled chicken breast optional

For the dressing:

  • salt & pepper to taste
  • olive oil to taste
  • balsamic vinegar to taste

Instructions

  • Toss together the romaine, cucumbers, tomatoes, olives, and feta.
  • Top with chicken, if using. Dress, to taste, with salt, pepper, olive oil, and balsamic vinegar.
