For the salad:
- 2 heads romaine lettuce
- 2 cucumbers diced
- 3 tomatoes seeded and diced
- 1 cup Kalamata olives
- 1 cup feta crumbled
- ¾ lb. grilled chicken breast optional
For the dressing:
- salt & pepper to taste
- olive oil to taste
- balsamic vinegar to taste
Toss together the romaine, cucumbers, tomatoes, olives, and feta.
Top with chicken, if using. Dress, to taste, with salt, pepper, olive oil, and balsamic vinegar.
