Instant Pot Italian Sausage Pasta Sauce over Spaghetti Squash

Ingredients

  • lbs. sweet Italian sausage links
  • ½ cup water
  • 1 green pepper
  • 1 red pepper
  • 1 onion chopped
  • 4-6 cloves garlic crushed
  • 28 oz. can crushed tomatoes
  • 16 oz. can tomato sauce
  • 1 Tbs. oregano
  • 1 Tbs. basil
  • 2 tsp. thyme
  • salt & pepper to taste
  • 1 large spaghetti squash cooked and scraped out

Instructions

  • Hit the sauté button and add the sausage links.
  • Once brown, add water, and continue to cook for 5 minutes.
  • Remove sausage and slice into rounds.
  • Add peppers, onions, and garlic to the Instant Pot.
  • Return sausage to the pot.
  • Stir in the remaining ingredients, except spaghetti squash.
  • Cover and set the cook time for 20 minutes, followed by a quick release.
  • Serve sauce over spaghetti squash.
