Instant Pot Lemon Artichoke Pork Chops

Ingredients

  • 2 Tbs. fresh rosemary chopped
  • ½ tsp. salt
  • ½ tsp. pepper
  • 32 oz. artichoke hearts
  • 2 small lemons thinly sliced
  • 2 cloves garlic minced
  • cups chicken broth
  • 6-8 pork chops

Instructions

  • Combine rosemary, salt & pepper in a small bowl.
  • In the pressure cooker, stir together the artichokes, lemon slices, garlic and ½ of the rosemary seasoning.
  • Stir in the broth.
  • Rub the remaining rosemary seasoning all over the pork chops.
  • Place the chops on top of the artichoke mixture in the pressure cooker.
  • Set manual cook time to 8 minutes on high pressure.
  • Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
