- 2 Tbs. fresh rosemary chopped
- ½ tsp. salt
- ½ tsp. pepper
- 32 oz. artichoke hearts
- 2 small lemons thinly sliced
- 2 cloves garlic minced
- 1½ cups chicken broth
- 6-8 pork chops
Combine rosemary, salt & pepper in a small bowl.
In the pressure cooker, stir together the artichokes, lemon slices, garlic and ½ of the rosemary seasoning.
Stir in the broth.
Rub the remaining rosemary seasoning all over the pork chops.
Place the chops on top of the artichoke mixture in the pressure cooker.
Set manual cook time to 8 minutes on high pressure.
Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
