Quick and Easy Chicken and Vegetable Super Grain Bowls

Ingredients

  • ¾ cup quinoa
  • 1 cup chicken broth
  • ½ cup water
  • 1 Tbs. olive oil
  • 2 cloves garlic crushed
  • ¼ Tbs. onion large, diced
  • ¼ Tbs. red bell pepper diced
  • 1-1½ cups chicken cooked chopped
  • ½ 15 oz. can diced tomatoes with juice
  • ¼ tsp oregano
  • ¼ tsp thyme
  • 1 pinch paprika
  • salt & pepper to taste
  • 1 cup spinach
  • 2 oz. feta crumbles

Instructions

For quinoa:

  • Rinse quinoa. Add water to chicken broth to bring the total amount of liquid to 3 cups.
  • In a pot, bring chicken broth and water to a boil.
  • Add grains, reduce heat, cover and simmer 15-20 minutes.

For grain bowls:

  • While the grains cook, heat olive oil in a skillet over medium heat.
  • Cook garlic, onion, and bell pepper until soft.
  • Add chicken, tomatoes, and seasoning to skillet and cook over medium heat until heated through.
  • Stir in spinach and allow to wilt.
  • Remove quinoa from heat and let stand for 5 minutes, then fluff with a fork.
  • Serve quinoa in bowls, topped with chicken and vegetables and feta crumbles.
