Quick and Easy Chicken and Vegetable Super Grain Bowls

- ¾ cup quinoa
- 1 cup chicken broth
- ½ cup water
- 1 Tbs. olive oil
- 2 cloves garlic crushed
- ¼ Tbs. onion large, diced
- ¼ Tbs. red bell pepper diced
- 1-1½ cups chicken cooked chopped
- ½ 15 oz. can diced tomatoes with juice
- ¼ tsp oregano
- ¼ tsp thyme
- 1 pinch paprika
- salt & pepper to taste
- 1 cup spinach
- 2 oz. feta crumbles
For quinoa:
Rinse quinoa. Add water to chicken broth to bring the total amount of liquid to 3 cups.
In a pot, bring chicken broth and water to a boil.
Add grains, reduce heat, cover and simmer 15-20 minutes.
For grain bowls:
While the grains cook, heat olive oil in a skillet over medium heat.
Cook garlic, onion, and bell pepper until soft.
Add chicken, tomatoes, and seasoning to skillet and cook over medium heat until heated through.
Stir in spinach and allow to wilt.
Remove quinoa from heat and let stand for 5 minutes, then fluff with a fork.
Serve quinoa in bowls, topped with chicken and vegetables and feta crumbles.
