Roasted Sweet Potato & Cranberry Salad

For the salad:
- 1-2 sweet potatoes peeled and diced
- 1 ½ tsp. olive oil
- 6-8 cups baby greens
- ⅓ cup dried cranberries
- ¼ cup pumpkin seeds
- ¼ cup chopped walnuts
- ⅓ lb. chicken grilled and diced
For the dressing:
- 2 Tbs. apple cider vinegar
- 6 Tbs. vegetable oil
- 1 tsp. Dijon mustard
- 1½ tsp. honey
- salt & pepper to taste
For the dressing:
Make the dressing by whisking together cider vinegar, vegetable oil, mustard, honey, salt, and pepper.
For the salad:
Toss together the baby greens, cranberries, pumpkin seeds, and walnuts.
Top with roasted sweet potatoes and chicken, if desired.
Serve with dressing.
