Roasted Sweet Potato & Cranberry Salad

Ingredients

For the salad:

  • 2-3 sweet potatoes peeled and diced
  • 1 Tbs. olive oil
  • 12-16 cups baby greens
  • ¾ cup dried cranberries
  • ½ cup pumpkin seeds
  • ½ cup chopped walnuts
  • ¾ lb. chicken grilled and diced

For the dressing:

  • ¼ cup apple cider vinegar
  • ¾ cup vegetable oil
  • 2 tsp. dijon mustard
  • 1 Tbs. honey
  • to taste salt & pepper

Instructions

  • Toss sweet potato cubes in olive oil and spread on a baking sheet. Roast in a 400° oven for 25-30 minutes, until tender.

For the dressing:

  • Make the dressing by whisking together cider vinegar, vegetable oil, mustard, honey, salt, and pepper.

For the salad:

  • Toss together the baby greens, cranberries, pumpkin seeds, and walnuts.
  • Top with roasted sweet potatoes and chicken, if desired.
  • Serve with dressing.
