Slow Cooker Italian Parmesan Herb Chicken and Potatoes

Ingredients

  • 1 lb. chicken breasts
  • 1 small onion sliced
  • ¾ lb. new potatoes quartered
  • 1 clove garlic crushed
  • ¼ tsp. oregano
  • ¼ tsp. basil
  • ¼ tsp. thyme
  • ¼ tsp. kosher salt
  • black pepper to taste
  • 3 Tbs. Parmesan cheese grated
  • 1 Tbs. olive oil

Instructions

  • Place chicken in the slow cooker.
  • Top with sliced onion.
  • In a small bowl, combine garlic, herbs, salt, pepper, Parmesan and oil.
  • Toss with potatoes.
  • Put the potatoes over chicken and onions in the slow cooker.
  • Cook on high for 5-6 hours or low for 7-8 hours.
