Smoked Sausage, Cabbage, and Oat Soup

- 1-1½ Tbs. olive oil
- 2 carrots chopped
- 1 small onion chopped
- 1 clove garlic crushed
- ½ smoked sausage sliced
- ¼ head of cabbage chopped
- 15 oz. can diced tomatoes with liquid
- 1½ cups chicken broth
- ¼ cup steel cut oats
- ½ tsp. thyme
- ¼ tsp. sugar
- ½ bay leaf
- salt and pepper to taste
Heat the oil in a large soup pot over medium heat.
Add carrots, onion, garlic and sausage and cook till the onion is clear.
Add cabbage and cover the soup pot, cooking for 5-10 minutes until cabbage wilts.
Add remaining ingredients and simmer over medium heat for 30 minutes or until oats are cooked.
Remove bay leaf and serve.
