Smoked Sausage, Cabbage, and Oat Soup

Ingredients

  • 1-1½ Tbs. olive oil
  • 2 carrots chopped
  • 1 small onion chopped
  • 1 clove garlic crushed
  • ½ smoked sausage sliced
  • ¼ head of cabbage chopped
  • 15 oz. can diced tomatoes with liquid
  • cups chicken broth
  • ¼ cup steel cut oats
  • ½ tsp. thyme
  • ¼ tsp. sugar
  • ½ bay leaf
  • salt and pepper to taste

Instructions

  • Heat the oil in a large soup pot over medium heat.
  • Add carrots, onion, garlic and sausage and cook till the onion is clear.
  • Add cabbage and cover the soup pot, cooking for 5-10 minutes until cabbage wilts.
  • Add remaining ingredients and simmer over medium heat for 30 minutes or until oats are cooked.
  • Remove bay leaf and serve.
