For the salad:
- 6-8 cups spring mix lettuce
- 1 shallot thinly sliced
- 1 avocado diced
- ½ cup almonds sliced
- ⅓ lb. chicken grilled and diced
For the dressing:
- ½ cup buttermilk
- ½ cup mayonnaise
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ½ Tbs. dried parsley
For the salad:
In a large bowl, toss together the lettuce, shallots, avocado, and almonds.
Top with chicken, if desired and add dressing to taste.
