For the shortcake:
- 2 cups white whole wheat or pastry flour
- 2 Tbs. sugar
- 1 Tbs. baking powder
- ½ tsp. salt
- ½ cup butter
- 1 egg beaten
- ⅔ cup milk
- 3-4 cups strawberries
- ½ cup sugar
- 1 container whipped cream or use homemade
For the homemade whipped cream:
- 1 cup heavy whipping cream
- 2 Tbs. powdered sugar
- 1-2 tsp. vanilla extract
For the shortcake:
Cut all the dry ingredients with butter.
Stir in the eggs and milk.
The batter will be thick.
Put it into a square 8x8 or 9x9 pan that you’ve greased.
Bake at 450° for 15-18 minutes.
Serve with strawberries sweetened with sugar and top with whipped cream.
For the homemade whipped cream:
Place the sugar into the mixing bowl of an electric mixer, or use a hand mixer and add the whipping cream.
Mix with electric mixer just until the cream reaches stiff peaks.
Add in vanilla, and gently mix in.
