Strawberry Shortcake

Ingredients

For the shortcake:

  • 2 cups white whole wheat or pastry flour
  • 2 Tbs. sugar
  • 1 Tbs. baking powder
  • ½ tsp. salt
  • ½ cup butter
  • 1 egg beaten
  • cup milk
  • 3-4 cups strawberries
  • ½ cup sugar
  • 1 container whipped cream or use homemade

For the homemade whipped cream:

  • 1 cup heavy whipping cream
  • 2 Tbs. powdered sugar
  • 1-2 tsp. vanilla extract

Instructions

For the shortcake:

  • Cut all the dry ingredients with butter.
  • Stir in the eggs and milk.
  • The batter will be thick.
  • Put it into a square 8x8 or 9x9 pan that you’ve greased.
  • Bake at 450° for 15-18 minutes.
  • Serve with strawberries sweetened with sugar and top with whipped cream.

For the homemade whipped cream:

  • Place the sugar into the mixing bowl of an electric mixer, or use a hand mixer and add the whipping cream.
  • Mix with electric mixer just until the cream reaches stiff peaks.
  • Add in vanilla, and gently mix in.
